Today's post is also about color, but not watercolor!
A few weeks ago I showed you the recipe for a spinach and pear smoothie perfect for these hot days. To continue with the theme, today I am going to talk about this no-bake bread recipe that I recently discovered in a recipe book.
It is very simple, and the best… NO OVEN!
INGREDIENTS
- Extra virgin olive oil.
- 180 grams of water.
- 10 grams of fresh pressed yeast.
- 70 grams of spinach. (The original recipe uses fresh leaves. Since I didn't have any, I used frozen spinach. I liked the result, although I'm sure it's better with fresh spinach.)
- 370 grams of strong flour.
- 1 teaspoon salt.
- 20 grams of pumpkin seeds.

UTENSILS/ ACCESSORIES
- Rectangular mold. (Important! It needs to get into the steamer.)
- Vegetable oven paper. (In the original recipe you don't use it, but I like to use it for easier unmolding.)
- Kitchen robot. (Very useful for kneading and mixing, although it can be done just as well without it.)
- If you do not have a food processor, you will need a steamer to cook the bread.
STEPS
- Vamos a preparar el molde.
- Mojamos la hoja de papel vegetal con abundante agua.
- Escurrimos bien para quitarle todo el agua posible.
- Forramos el molde con el papel.
- Reservamos.
- Put the water, the yeast, the spinach, the flour and the salt in a bowl (or in the food processor).
- We grind well. (With the robot or with a hand grinder).
- Remove the dough from the bowl and knead for 6 minutes. NOTE. If you use a food processor, you can use the kneading function and reduce the time to 3 minutes.

- Form a ball and knead into a cylinder shape.
- Introduce the cylinder into the mold and paint with oil.
- Sprinkle the rest of the pumpkin seeds.
- Wrap in plastic wrap and let rest for 1 hour.
- Steam for 45 minutes (without removing the film).
- Clever! Now you just have to let it cool.

The final texture is like that of sliced bread but with a completely different flavor, much better!
I have to admit that I forgot to paint the bread with oil… I think that's why it has a lighter color. Next time I won't forget!
Although I have not put it into practice, the recipe is suitable for modifications. We can swap the spinach for another vegetable…or just remove it. We can change the pumpkin seeds for sunflower seeds, or even add a variety of seeds.
